We discovered this recipe a few years back when looking for a dessert to make for Rosh Hashanah. This cake doesn’t last any longer than a day in our house, it is that good!
It involves a bit of steps to make, but trust me it is well worth the effort!
The cake itself is not too sweet, but the caramel glaze for the top is what makes this cake! If we ever have some left over, it tastes even better the next day!! If it lasts that long!

Recipe:
Ingredients
3 cups all purpose flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1 cup raisins rehydrated in 1/2 cup apple juice
2 teaspoons vanilla extract
1 cup vegetable (or canola) oil
3 eggs
3-4 apples of your choice (peeled and cored)
Caramel Glaze Topping
1 cup packed brown sugar
1/4 cup butter, cubed
1/3 cup whipping cream
Directions
- Preheat your oven to 350F and grease a 9×13 baking dish with non stick oil spray.
- Place all the dry ingredients in a bowl and sift together. Set aside.
- Drain the raisins and add them to the bowl with apples.
- In another bowl, add the apple juice, vanilla, oil, eggs.
- Add the apple/raisins to the mixed egg mixture.
- Add the wet mixture to the flour mixture, and stir until well combined. Spread batter into baking dish and bake for 45-50 min.
- To make the glaze: stir all ingredients in a saucepan over med heat. Cook and stir until bubbly and all sugar is dissolved. Cool slightly and drizzle over warm cake.
